We don’t eat eggplant often in our family. First time I have tried this, I was visiting my friends. I was very impressed with flavors, it was simple but something I have never tried. Later on I found out that this is actually pretty common appetizer in Slavic community. Very easy appetizer to fix up for party.
Optional: You can use any herbs or your choice such as parsley, thyme, basil… Also you can add parmesan cheese to mayonnaise.
Slice eggplants; place them in one layer on baking sheet, sprinkle with olive oil, salt and pepper.
Broil them until they are soft and browned; flip over to brown the other side. Meanwhile mix together garlic and mayonnaise.
Remove eggplant from oven and let them cool in room temperature.
Arrange the eggplant slices on a plate, top each one with thin layer of mayo mixture, tomato and little dollop of mayo. Garnish with herbs on top.
