Easy Marinated Cucumbers (Mom’s Recipe)

Marinated cucumbers with garlic are the perfect sidekick to a sandwich, soup or really anything to be honest. Easy-to-make, these crunchy morsels will disappear faster than you can make them.

If you have a huge haul of cucumbers from your garden, this recipe is a great way to put them to good use. Eat them as-is or whip up our very favorite creamy cucumber salad. Trust me, you will thank me later. 

Marinated cucumbers are best to make overnight. They need at least 2 hours of the time to marinate. While this recipe doesn’t require any vinegar (like most marinated cucumber recipes do), the minced garlic and salt need enough time to soak into the cucumbers.

Marinated cucumbers hold a special place in my heart. For Eastern Europeans, these dill and garlic cucumbers are frequent at family parties or gatherings. 

How to Marinate Cucumbers with Garlic

  1. Wash and cut each cucumber into long, spear pieces (about 3-4 spears per cucumber). 
  2. Add salt, dill and garlic. Mix to spread the seasoning evenly. 
  3. Marinate for at least 2 hours and up to 5 days! 

What Cucumbers Should I Use? 

There are a lot of cucumbers out there, but not all of them are created equally when it comes to making marinated cucumbers. English cucumbers are your best bet, as they are sweet and they don’t require you to scoop out the seeds. You could also use American slicing cucumbers. 

Note: If you don’t want to use spear shapes, feel free to slice your cucumbers into thin medallions. You can add some red onion or bell pepper to the mix for more of a salad!

Storing Marinated Cucumbers

Store marinated cucumbers in the refrigerator to keep them nice and crunchy. Typically, they stay fresh for up to five days when stored in an airtight container. You could also store your marinated pickles in a mason jar if you have any on hand.

Marinated cucumbers are an awesome side dish for so many different mains. From grilled chicken to roasted potatoes to mashed potatoes and beyond, they have a refreshing flavor that compliments a fatty and rich main course oh-so well.
