Here is a pretty funny story. Back in Ukraine we always picked mushrooms, so here when we found out that some places here also grow mushrooms, my family was excited. Tim & I decided to join them one time to pick some. It was in the mountains; Tim tells me that he will climb high up. I was following him. Almost at the top he says, “look there is a bear!” OHH WOW!!! I wanted to scream, cry and run. We came back to our car pretty quick… I think that was our last time picking mushrooms. But I really like mushrooms in my borshch or soup. The flavors of this soup are indescribable. If you like mushrooms and haven’t tried this, you’re definitely missing out.
Note: I’ve seen dry mushrooms sold in Trader Joes, Fred Meyer (some states have this store named Kroger). Also if you have a local Russian store, they often sell them. Well, if you have a good gun, go for it, go mushroom picking! 🙂
Fill 2/3 of 5 quart pot with water. Add chicken; bring to boil, turn down heat to low-medium and cook for 10 minutes.
Soak mushrooms in boiled water for 5-10 minutes. Add mushrooms, cook for 10 minutes. Add sliced potatoes and macaroni into the water and cook for another 10-15 minutes.
Add dill, ground pepper & salt to taste.
Sautée your carrots, onions, with 4 tablespoons cooking oil. Sautée until vegetables are soft (5 minutes). Add to all coking ingredient. Cook another 15 minutes, on low heat. Serve while its warm.
